Mediterranean Lamb & Pepper Skewers with Lemon Herb Yoghurt

Serves: 1 Prep Time: 10 minutes (plus 2 hours marinating) Cook Time: 10–15 minutes
Ingredients
For the Lamb Skewers
160g lean lamb shoulder, diced into bite-sized cubes
½ green bell pepper, cut into large chunks
½ red onion, cut into large chunks
Olive oil spray
For the Marinade
½ tsp chilli flakes
½ tsp cumin seeds
½ tsp fennel seeds
1 tsp garlic granules or finely minced garlic
1 tsp extra virgin olive oil
Sea salt and black pepper, to taste
For the Lemon Herb Yoghurt
75g Greek yoghurt
Juice of ½ lemon
1 tbsp fresh parsley, finely chopped
1 tbsp fresh mint, finely chopped
Pinch of sea salt
Freshly ground black pepper
Method
Step 1
Place the lamb cubes into a bowl and season with salt and pepper.
Step 2
Combine the chilli flakes, cumin seeds, fennel seeds, garlic and olive oil. Pour over the lamb and mix thoroughly until evenly coated. Cover and refrigerate for at least 2 hours, or overnight for maximum flavour.
Step 3
Cut the pepper and onion into large chunks. Thread the lamb, pepper and onion onto skewers, alternating ingredients to create colourful skewers.
Step 4
Preheat the oven to 250°C or heat a grill or griddle pan until very hot.
Step 5
Place a baking tray in the oven to heat. Carefully remove the tray, lightly spray with olive oil and arrange the skewers on top.
Step 6
Cook for 10–12 minutes, turning halfway through, until the lamb is lightly charred on the outside and cooked to your preference.
Step 7
Meanwhile, combine the Greek yoghurt, lemon juice, parsley, mint, salt and pepper in a small bowl and stir until smooth.
Step 8
Serve the skewers immediately with the lemon herb yoghurt spooned alongside or drizzled over the lamb.
