Smoked Salmon and Goat’s Cheese Egg Scramble

Serves: 1 Prep Time: 5 minutes Cook Time: 7–10 minutes

Ingredients

  • 3-4 eggs

  • 40g smoked salmon, torn into bite-sized pieces

  • 80g chestnut mushrooms, sliced

  • 1 cup fresh spinach

  • 20g soft goat’s cheese, crumbled

  • 1 tbsp extra virgin olive oil

  • Sea salt and freshly ground black pepper, to taste

  • Pinch of chilli flakes (optional)

  • Fresh dill or parsley, finely chopped (optional)

Method

Step 1

Heat the olive oil in a non-stick frying pan over a medium heat. Add the sliced mushrooms and cook for 3–4 minutes until softened and lightly golden.

Step 2

Add the spinach and cook for 1 minute until wilted.

Step 3

Pour in the eggs and season lightly with salt and black pepper. Reduce the heat slightly and gently stir with a spatula as the eggs begin to set.

Step 4

When the eggs are almost cooked through, fold in the smoked salmon and half of the goat’s cheese.

Step 5

Continue cooking for a further minute until the salmon is warmed through and the eggs are softly scrambled.

Step 6

Transfer to a serving plate and scatter over the remaining goat’s cheese. Finish with fresh herbs and chilli flakes if using.

Nutritionist’s Notes

This high-protein breakfast is rich in amino acids while remaining relatively low in carbohydrates. Smoked salmon provides omega-3 fatty acids, vitamin D and selenium, while goat’s cheese adds creaminess and a distinctive tangy flavour.

The mushrooms and spinach contribute fibre, potassium, folate and a range of antioxidant compounds, creating a nutrient-dense meal that works well for breakfast, brunch or a light lunch.

Variations

  • Replace smoked salmon with hot-smoked salmon for a richer flavour.

  • Add asparagus tips or tenderstem broccoli.

  • Swap goat’s cheese for feta or ricotta.

  • Stir through fresh chives and dill for a Scandinavian-inspired twist.

  • Serve alongside sliced avocado for additional healthy fats.
